Chai Granola with Goji Berries and Mascarpone

COOK TIME 35 mins


    • 4 cups gluten-free oats
    • 2 cups nuts
    • ¼ cup black sesame seeds
    • ¼ cup each, coconut oil, maple syrup and almond butter
    • ¾ cup Chai Addict
    • ¼ tsp salt
    • ¼ cup each, pepitas and sunflower seeds
    • ¼ cup each, goji berries and dates
    • Optional: buckinis, coconut flakes, cacao nibs, puffed millet


    • Preheat your oven at 175C. Combine oats, nuts & sesame in a bowl.

    • The Sauce: Heat coconut oil, maple syrup, almond butter, Chai Addict and salt in a saucepan. Bring to a simmer, stir until combined then remove from heat. Pour sauce over the nuts and oats and mix well to combine.

    • Bake it: Spread evenly on a baking dish. Bake for 35 minutes, stirring occasionally until the grains and nuts are thoroughly toasted. Remove from the oven, stir and cool. Combine the remaining ingredients and mix well.

    • To serve: Enjoy as a snack, with yoghurt or with poached pears.
